Low Carb Taco Soup

Ingredients

1 lbs ground beef
1 small onion finely chopped
1 garlic cloves, minced
1 Tbsp of cumin
1 Tbsp of chili powder
8 oz cream cheese, softened
2 (10 oz) cans Rotel tomatoes
1 can of beef/chicken broth
1 cup heavy cream
1 packet taco seasoning

Directions

  • Brown the meat and drain. Add taco seasoning and follow the directions to cook.
  • Add in the minced garlic and onion. Cook until the onion is translucent.
  • Add in spices and let cook for one minute. Cut cream cheese into cubes.
  • Add the cream cheese. Stir until melted.
  • Add 2 cans of Rotel, beef broth, and heavy cream.
  • Stir well, bring to a slow boil.

Top with sour cream, cheese, avacado, raw onion.

Make low carb tortilla chips to eat with soup.
