Egg Pancakes

Ingredients

2 eggs, whipped well
1/2 tsp salt
1 tbsp sugar
1/3 cup flour
1/2 cup milk
1 tsp shortening

Directions

Preparation
  • Preheat oven to 450°.
Making
  • Beat eggs well with salt and sugar
  • Add flour and milk to eggs. Beat until smooth.
  • Heat shortening in deep cast iron skillet (10-12 inch round) until a drop of water sizzles in skillet.
  • Pour batter into skillet.
Baking
  • Bake at 450° for 15 minutes until surface is brown.
Serving
  • Dot with butter and sweetened fruit, jam, syrup, or honey.
  • Roll or fold from opposite sides to center, making 3 layers.
  • Turn out on warm platter, sprinkle with powdered sugar.
Variations
  1. Fill with apple, cherry, or blueberry pie filling.
  2. Place 1 layer of thinly sliced apples over the batter just before baking.
